First, cut up your potatoes into nice even slices and put in to a plastic bag w/oil, Big Poppa’s Little Louie’s and garlic butter. Then set them aside as you prep the fish. To prep the fish, season with Big Poppa’s Desert Gold and lemon. Now you are ready to head to the griddle.
Because of different cook times, place your parchment down first for your potatoes, followed by your parmesan. Then place your potatoes on the parchment to begin the cook process. Make sure your griddle is already heated to 400 before you place the potatoes. You will cook for 5-6 minutes until golden brown and then flip over. Then you can place your halibut down on the other side of the griddle that is at 325. Let cook for 4-5 minutes until golden brown and flip. You are looking for internal temperature of 135 for the fish.
Pull fish and plate with roasted lemons and the potatoes. Top the potatoes with Mexican Crema and chives.
