Pineapple Juice (2 cups)
Soy Sauce (1/2 cup)
Sugar (1/2 cup)
Apple Cider Vinegar (5 tbs)
Toasted Sesame Oil (2 tsp)
White Onion (1/3 cup, chopped)
Ginger (1-inch piece, peeled and finely chopped)
Prime Filets (3 pounds)
Prepare the marinade. For this you’ll need to mix the following in a bag: 2 cups pineapple juice, 1/2 cup soy sauce, 1/2 cup sugar, 5 tbs apple cider vinegar, 2 tsp toasted sesame oil, 1/3 cup chopped white onion, 1-inch piece of ginger (peeled and finely chopped). This marinade is enough for 3 pounds of meat.
Refrigerate the marinade in the baggie with the meat for at least an hour (the longer the better).
Set your cooker for 275F.
Cook covered for 8 minutes. Flip and repeat. Remove steaks and turn your cooker to high or let the coals rage uncovered to get a nice sear. Sear for 1 minute, turn 90 degrees and sear for another minute (to get those nice sear marks). Flip and repeat.
Remove from the cooker, rest and prep to serve.
